I’m pretty sure you are wondering what this is, haha. I love to give my signature meals their own names but don’t worry. This meal is basically Cayenne chicken drumsticks that have been dipped in tasty, creamy blue cheese sauce.
This meal is a fancy and satisfying meal that’s quite easy to prepare. Twelve ingredients are used to make this meal and the cook time takes over an hour but it is totally worth the wait and time. If you are a big lover of chicken, you should give this dish a try.

  • 1 ½ tablespoon of plain flour
  • 3 yolks of eggs
  • 200ml sunflower (canola oil can be a good substitute)
  • 12 chicken drumsticks
  • ½ teaspoon of cayenne pepper
  • 1 tablespoon of white vinegar
  • Celery stalks
  • 2 tablespoons of light sour cream
  • 2 tablespoons of lemon juice.
  • 150g mild blue cheese
  • 1 very full teaspoons of Dijon mustard
  • 1 teaspoon of smoked paprika.
  • Ps, the amount of these ingredients are adequate for four servings.

i. Wipe out your oven and get it ready by preheating it to 180°C. you don’t want the oven to be extremely hot so as not to burn your meat immediately it enters.

ii. Line a baking tray with baking paper. This helps to prevent stickiness from occurring.

iii. Put the flour, the cayenne and the paprika in a large Ziploc bag and leave for minutes to properly mix

iv. Gently pat down the chicken to dryness with a paper towel.

v. Add a pinch of salt and the ground black pepper to the mix in the Ziploc.
Yum, as I type this, I can see all the procedures in my head and I can almost swear that I can taste the lovely goodness that will be the outcome of this meal.

vi. Add your chicken to the Ziploc bag and seal it properly. Shake the chicken and the mix to make sure it is evenly coated.

vii. When the chicken must have been properly immersed in the mix, arrange it on the baking tray you lined earlier and place it inside the oven to bake for about 40 minutes. Always remember to flip the chicken over at intervals to ensure that it is not getting burned. When it is done, cook for an additional 20-25 minutes, this will ensure that it is crispy and more delicious.

viii. Brush the chicken with any pan juice you have available and keep it in a warm temperature. Now your chicken is done, add your yolk into a food processor until it is smooth.

ix. Add your oil to the yolk until it is thick and shiny. Then, add the mustard, the vinegar, the lemon juice , the sour cream and the cheese including the seasons to the yolk mix and whiz it to mix properly.

x. Your delicious meal is ready to be eaten. Serve your chicken dish with the dipping sauce and the celery and watch the magic that will take place on your taste buds.
